An incredibly easy to make salad with lots of delightful flavors. Enjoy!
- 1 container of mixed spring lettuces
- 1/2 container of arugula
- 10 kalamata olives, pitted and halved
- 2 green bell peppers, sliced
- 1 large cucumber, quartered and sliced
- 1 large zucchini, quartered and sliced
- 12 salad tomato, quartered
- 6 fresh basil leaves, roughly chopped
- 1 ripe avocado, cubed
- 1/4 cup walnuts
- In a large mixing bowl, toss all of the ingredients together.
- Place in refrigerator for at least 2 hours to let the flavors meld. (optional)
- Eat as is or top with a drizzle of your favorite salad dressing.
